A Twist of Feta
 
According to food anthropologists, the invention of cheese is shrouded in mystery, and the facts are murky—though legend holds that an ancient nomadic Mesopotamian sheepherder invented cheese accidentally when storing sheep milk in a container made from an animal stomach. The combination of rennet (an enzyme in the stomach lining) and heat caused the milk to separate into curds, forming the first cheese.
